Sample Detox Diet Recipes...

Coconut Seafood Chowder

1 pound assorted fish & seafood 4 potatoes chopped

Corn niblets

Salt & Pepper to taste

¼ to ½ cup coconut milk

Chicken broth (homemade is better, if possible)

½ tsp. Parsley

Optional: pinch paprika

  1. Boil potatoes until almost tender
  2. Add corn, seafood, chicken broth. Cook until seafood is opaque.
  3. Add coconut milk
  4. Serves 4

Poached Apple & Cinnamon Salmon

1 salmon fillet 1 cup juice (apple or tropical* is best)

Chopped fresh apple

1 tsp olive oil

¼ teaspoon cinnamon and ¼ teaspoon turmeric

  1. Sauté cinnamon and turmeric in olive oil for a few seconds in a deep skillet
  2. Add juice, chopped apple and salmon
  3. Cover and bring to boil
  4. Reduce heat and simmer until fish is opaque (7 – 10 minutes)
  5. Reduce liquid and pour sauce over fish and rice

Variation:

  • Use Rainbow Snapper instead of Salmon (or your favourite fish)
  • Use any type of juice or fruit
  • Add 1 tablespoon of coconut milk to thicken sauce to pour over fish

*tropical juice is not a brand, it is just a blend of different juices, preferably tropical types like mango, passionfruit, guava, papaya or whatever juices you like

 

Seafood Paella

1-pound large shrimp / prawns

2 cups basmati rice

1 onion, diced

1 tomato, diced

Red & Green pepper, diced

Chopped mushrooms

Chopped fresh basil

Homemade Chicken stock, 2 cups

½ tsp. Parsley

Salt & Pepper

1/2 tsp Cinnamon, 1/4 tsp turmeric

¼ cup white wine

  1. Sauté onion, mushrooms, and peppers for a minute. (Reserve a small amount of onions to sauté shrimp in later)
  2. Bring chicken stock and rice to boil. Lower heat and simmer for 10 minutes.
  3. Add vegetables and spices and simmer for another 10 minutes or until rice is done. (Add water if necessary)
  4. Sauté shrimp and onion for a few minutes until shrimp is pink
  5. Add diced tomatoes to rice and let sit for 5 minutes, and then serve.
  6. Serves 4

Variation:

  • Add Rainbow Snapper and / or Salmon (or your favourite fish) as well as the shrimps
  • Add your favourite seafood (scallops, mussels, clams, calamari)

 

Vegetarian Coconut Curry

1 cup cooked lentils and / or beans

2 chopped potatoes

2 chopped carrots

Chopped green beans

1 teaspoon olive oil

1 teaspoon curry paste

¼ teaspoon cinnamon ¼ teaspoon turmeric

¼ to ½ cup coconut milk

Squeeze of lemon or lime

  1. Boil the vegetables until tender and drain (note: you can use any of your favourite vegetables)
  2. Add the cooked lentils and beans to the vegetable mixture
  3. Sauté cinnamon and turmeric in olive oil for a few seconds in a skillet
  4. Add coconut milk and curry paste and simmer gently for a minute or two, then add to vegetable mixture
  5. Serve with basmati rice

 

Salmon & Lentil Dip / Spread

1 tin salmon

½ cup cooked lentils

½ clove garlic, minced

Low fat Ricotta cheese

1 tbsp. chopped chives

Fresh basil

Fresh grated parmesan cheese

Salt & Pepper

Optional: Lemon or lime juice ¼ onion, minced

  1. Use a stick blender to mash together salmon and lentils
  2. Mix together remaining ingredients
  3. Serve with chopped vegetables or grilled pita bread, broken into chunks or crackers, topped with your favourite pickles.

Variation:

  • Add minced capsicum
  • Add mashed tuna and / or sardines for extra Omega-3 power
  • Replace either salmon or sardines with mashed tuna
  • Replace ricotta cheese with plain yogurt or cream cheese (low fat)
  • Mix together dip with mashed sweet potatoes, form into patties and pan-fry for a delicious Fish Cake
