1 pound assorted fish & seafood 4 potatoes chopped
Corn niblets Salt &
Pepper to taste
¼ to ½ cup coconut milk Chicken broth
(homemade is better, if possible)
½ tsp. Parsley
Optional: pinch paprika
- Boil potatoes until almost tender
- Add corn, seafood, chicken broth. Cook until
seafood is opaque.
- Add coconut milk
- Serves 4
1 salmon fillet 1 cup
juice (apple or tropical* is best)
Chopped fresh apple 1 tsp olive
oil
¼ teaspoon cinnamon ¼ teaspoon
turmeric
- Sauté cinnamon and turmeric in olive oil for a few
seconds in a deep skillet
- Add juice, chopped apple and salmon
- Cover and bring to boil
- Reduce heat and simmer until fish is opaque (7 – 10
minutes)
- Reduce liquid and pour sauce over fish and rice
Variation:

Use Rainbow Snapper instead of Salmon (or your favourite fish)

Use any type of juice or fruit

Add 1 tablespoon of coconut milk to thicken sauce to pour over
fish
*tropical juice is not a brand, it is just a blend of different juices,
preferably tropical types like mango, passionfruit, guava, papaya or whatever
juices you like
1-pound large shrimp / prawns 2 cups basmati
rice
1 onion, diced 1
tomato, diced
Red & Green pepper, diced Chopped mushrooms
Chopped fresh basil Homemade
Chicken stock, 2 cups
½ tsp. Parsley Salt &
Pepper
¼ cup white wine
- Sauté onion, mushrooms, and peppers for a minute.
(Reserve a small amount of onions to sauté shrimp in later)
- Bring chicken stock and rice to boil. Lower heat and
simmer for 10 minutes.
- Add vegetables and spices and simmer for another 10
minutes or until rice is done. (Add water if necessary)
- Sauté shrimp and onion for a few minutes until shrimp
is pink
- Add diced tomatoes to rice and let sit for 5 minutes,
and then serve.
- Serves 4

1 cup cooked lentils and / or beans 2
chopped potatoes
2 chopped carrots
Chopped green beans
1 teaspoon olive oil
1 teaspoon curry paste
¼ teaspoon cinnamon
¼ teaspoon turmeric
¼ to ½ cup coconut milk
- Boil the vegetables until tender and drain (note:
you can use any of your favourite vegetables)
- Add the cooked lentils and beans to the vegetable
mixture
- Sauté cinnamon and turmeric in olive oil for a few
seconds in a skillet
- Add coconut milk and curry paste and simmer gently for
a minute or two, then add to vegetable mixture
- Serve with basmati rice
1 tin salmon ½ cup
cooked lentils
½ clove garlic, minced Low fat
Ricotta cheese
1 tbsp. chopped chives Fresh basil
Fresh grated parmesan cheese Salt & Pepper
Optional: Lemon or lime juice ¼ onion, minced
- Use a stick blender to mash together salmon and
lentils
- Mix together remaining ingredients
- Serve with chopped vegetables or grilled pita bread,
broken into chunks or crackers, topped with your favourite pickles.
