Super Foods Recipe: Ginger Prawn & Tofu Stir-fry
100 gr. prawns 100 gr. cubed tofu 1/4 cup chicken stock Dash Soy, Teriyaki or Black bean sauce Chopped vegetables (broccoli, green beans, carrot, mushrooms, onion or your favourites) Chopped ginger to taste Chopped garlic to taste Salt and pepper, to taste Cooked rice vermicelli noodles (or your favourite) - Heat large frypan or wok
- Add prawns and a bit of olive oil or chicken stock and quickly saute. Set aside.
- Stir-fry vegetables, ginger and garlic in chicken stock and soy, teriyaki or black bean sauce until just tender.
- Add back prawns, tofu and vermicelli noodles and toss until heated through
- Serves 4
