"Super Foods": Salmon and Other Omega-3 Fish

Super Foods Recipe:  Poached Salmon

1 salmon fillet                                                Salt & Pepper, to taste

1 cup orange juice or tropical juice                    Fresh basil or lemongrass                                 

 

  1. Place all ingredients in a skillet over medium heat. 
  2. Cover and simmer gently for 7 – 8 minutes or until salmon is cooked through.
  3. Remove fish, simmer liquid for a few minutes to reduce, or add a little cornstarch mixed in cold water* to thicken into a sauce to pour over fish. 
  4. Serve immediately with lemon wedges

* Add 1 tablespoon of cornstarch to 1/4 cup of cold water, stir until all dissolved and add to simmering juice, continue to simmer until thickened.
