Super Foods Recipe: Poached Salmon
1 salmon fillet Salt & Pepper, to taste 1 cup orange juice or tropical juice Fresh basil or lemongrass - Place all ingredients in a skillet over medium heat.
- Cover and simmer gently for 7 – 8 minutes or until salmon is cooked through.
- Remove fish, simmer liquid for a few minutes to reduce, or add a little cornstarch mixed in cold water* to thicken into a sauce to pour over fish.
- Serve immediately with lemon wedges
* Add 1 tablespoon of cornstarch to 1/4 cup of cold water, stir until all dissolved and add to simmering juice, continue to simmer until thickened.
